Apple Muffin Macaroon Cobbler – Throwback Thursday

This week for “Throwback Thursday” I want to share a festive recipe, perfect for the holiday season that comes from a recipe contest all the way back in 1987!

In that year, Bay’s English Muffins held a recipe contest with a stunning prize –  an all expenses paid trip to Hong Kong and cooking lessons with master chef Ken Hom.

Bay’s awarded the grand prize to Cooking Contest Central charter member, Priscilla Yee for her creative “Apple Muffin Macaroon Cobbler.”   This time of year it seemed like the perfect recipe to share with all of you!

Priscilla said, “While people usually think of English muffins as a base for different spreads or a unique approach to a sandwich, I felt the texture would make a perfect topping for an old-fashioned bread pudding dessert.”

Priscilla’s winning recipe features an English muffin bread pudding, flavored with ground almonds and orange rind.  This mixture is poured over layers of apples and cinnamon and baked to a golden brown. Serve the dessert warm, plain or with a scoop of ice cream.
