We are thrilled to announce the winner in our March “Decadent Desserts” recipe contest!  We were flooded with so many outstanding entries, our judges had the difficult task of selecting just one.

Congratulations to Cathy Wiechert for her “Triple Shot Coconut Cream Pie!”

As the name implies, this recipe has not one, not two, but three kinds of coconut to take the dessert over the top.

There’s coconut, coconut milk, coconut rum and even a graham cracker crust made with coconut oil!

Let’s hear from Cathy about her award-winning recipe.

How did you come up with your winning recipe?

This particular recipe was very special to me as it was the last dessert that I made for my mother-in-law. She was always my biggest supporter (and recipe taste tester). Coconut Cream Pie was one of her favorites, so I made sure it was full of coconut flavor. She ate every bite!

Why is this one of your favorite desserts?

I love just about every kind of pie, but cream pies are my favorite. There’s something about the homemade custard that brings me right back to my childhood. I can actually remember my mother making custard to fill pastries in my father’s bakery…I’m making myself hungry just thinking about it!

Do you have any plans for the prize?  

This mixer is going to replace the KitchenAid that I’ve been using (on almost a daily basis) for the last 10 years. There’s actually nothing wrong with the one I have–in fact I will be giving it to my daughter. But a shiny new one?! I can’t wait to mix something up in it!

Do you have an award-winning tips or recipe contest advice?

The best tip I have for developing a winning recipe? Take a classic, mix it up, and make it your own. Swap out one liquid for another, change the flavor from vanilla to chocolate, or add something unexpected. Then think up a cool name. Better yet, think up a cool name first, and work your recipe around it!
