Lamb chops are a favorite in my grilling repertoire. They cook fast, taste delicious and are very versatile. The spices in my recipe compliment the lamb very well. The lemon and mint flavored cucumber salad are a nice addition to this summer grilling dish. Tomatoes on the vine round out this dish.

Ingredients

  • For the marinade,
  • 2 cups strong mint tea, cooled
  • 1 cup plain Greek yogurt
  • 2 teaspoons chopped garlic
  • 1 Tablespoon chopped fresh ginger
  • 2 Tablespoons extra virgin olive oil
  • For the grill,
  • 6 lamb loin chops, 1 -1/2 inch thick
  • 2 teaspoons salt
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground chipotle chili pepper (or to taste)
  • 6 small tomatoes on the vine
  • 2 cups finely chopped cucumbers
  • For the salad,
  • 1/2 cup plain Greek yogurt
  • 1 Tablespoon lemon zest
  • 1 Tablespoon lemon juice
  • 1/2 Tablespoon chopped fresh mint, plus extra for garnish
  • Salt and pepper to taste

Instructions

  1. Make a marinade with cold mint tea, yogurt, garlic, ginger and olive oil. Place lamb chops into a dish and cover with marinade. Refrigerate for 2 hours.
  2. Remove lamb chops from marinade and pat dry. Discard marinade. Season meat with salt, cumin, coriander and chipotle pepper.
  3. Grill lamb chops on high heat for about 5-7 minutes per side for medium rare. Remove from grill and rest. Grill tomatoes 1-2 minutes.
  4. To make salad, combine cucumber, yogurt, lemon zest and mint. Season with salt and pepper.
  5. Spoon salad on plate. Top with lamb chops and tomatoes. Garnish with additional mint leaves.
