Savoy Cabbage in Cream Sauce with Bacon and Onions

I was raised in a large German family and my mom loved to cook. She cooked dinner every night and everyone was expected to be there. What we really looked forward to was Sunday dinner because that was the day my mom would spend the whole day making potato dumplings, with a pork roast and cabbage. Sometimes it was cabbage simply cooked in broth or even sauerkraut but what I loved the most was when she made creamed cabbage with bacon and onions. The smell of the pork roast, bacon and onions filled the house and made the day special. My mom used regular green or red cabbage because it was less expensive but I discovered savoy cabbage and that is what I like to use. I added the cayenne, garlic and red peppers to make it a bit spicier.

Ingredients

  • 1 head savoy cabbage
  • 1 medium onion, diced
  • 8oz. bacon
  • 2 cloves garlic, minced
  • ½ cup chicken broth
  • ½ teaspoon nutmeg
  • ½ teaspoon cayenne
  • ½ teaspoon salt
  • ½ cup half and half or whipping cream
  • 1 tablespoon flour
  • Crushed red pepper flakes, to taste

Instructions

  1. Cut cabbage down the center and remove core. Shred cabbage and set aside.
  2. In a skillet or pot large enough to hold the cabbage, cook the bacon over medium heat until crispy. Remove to paper towel.
  3. Drain bacon grease reserving 2 tablespoons in pan. Add onion and sauté over medium heat until translucent. Add garlic, chicken broth, nutmeg, cayenne, salt, cabbage and crumbled bacon.
  4. Reduce heat and simmer until cabbage is wilted but still crunchy. About 10 minutes. Add flour to half and half and stir to remove lumps. Slowly pour mixture into the cabbage and toss lightly to thicken sauce. Garnish with pepper flakes, to taste.

Notes

Additional chicken broth may be needed based on size of the cabbage.
