Allspiced-Up Maple Glazed Sausage and Pear Skillet Salad
This healthy and hearty warm salad is filled with the flavors of fall! Entry from Roxanne Chan in the “Think Outside the Griddle” recipe contest.
Ingredients
- 1 Tbsp olive oil
- 8 ounces fully cooked Italian chicken sausage links, sliced
- 1 cup diced peeled winter pear
- 1/2 cup sliced carrots
- 1/4 cup chopped sweet onion
- 1/4 cup chopped red bell pepper
- 1/2 tsp ground allspice
- 2 Tbsp lime juice
- 2 Tbsp pure maple syrup
- 1/4 tsp salt
- 1/4 tsp crushed red pepper
- 4 cups mixed greens, cut into julienne strips
- 1/4 cup snipped mint
- Garnish- pumpkin seeds
Instructions
- Heat the oil in a large skillet. Saute the sausage slices, pear, carrot, onion, bell pepper for 3 minutes. Mix together the allspice, lime juice, maple syrup, salt and pepper till well blended; add to the skillet and cook for 2 minutes. Remove the skillet from the heat and stir in the greens and mint to evenly distribute and coat with the maple syrup glaze. Serve immediately with pumpkin seed garnish.
