This recipe is not only delicious and easy to make but it is also protein packed and low calorie. We all know how protein packed snacks fill us more and keep us full longer. Each delightful snack just under 50 calories.
So nice to be able to indulge without the guilt!

Ingredients

  • 1 can (15oz) chickpeas, drained well
  • 1 can albacore tuna in water, drained
  • 4 Light spreadable cheese wedges (I used 2 regular flavor and 2 Garlic and Herb flavor)
  • 1/2 cup of seasoned bread crumbs
  • 2 eggs
  • 2 tbsp minced onion
  • 1 clove minced garlic
  • 1 tbsp chopped fresh parsley

Instructions

  1. Place all ingredients in a food processor until a paste is formed. Let mixture sit in refrigerator for at least 1 hour (or overnight if planning ahead). With moist hands, make 20 equal balls with the mix. Lightly brush olive oil on the surface of a nonstick grill pan. Heat pan to medium high heat. Take each ball and flatten into patty. Place on hot grill pan. Brown evenly on both sides. Serve warm on a bed of lettuce with your favorite light dip.

Notes

Preparation time and cook time are short but the recipe turns out better if it rests for one hour (or overnight) in the fridge.
