These crunchy, gluten-free green bean fries will satisfy your snack cravings.

Ingredients

  • 1/2 pound fresh green beans
  • 1 Tablespoon extra virgin olive oil
  • 2 Tablespoons organic white rice flour
  • 1 cup Rice Chex cereal, crushed
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • pinch of cayenne pepper
  • 2 egg whites

Instructions

  1. Preheat oven to 425 degrees.
  2. In a medium bowl, toss green beans with olive oil, working with your hands to make sure beans are coated well. Add rice flour and stir well.
  3. In a shallow pan or pie plate, stir together crushed cereal, salt, garlic powder, paprika, and cayenne. Set aside. In another shallow pan, beat egg whites until foamy. Working with a small handful of beans at a time, dip them in the egg whites then in the cereal mixture. Make sure to allow excess egg whites to drip off of the beans before coating with cereal. Place beans on a large baking sheet and bake for 12 to 14 minutes or until crispy. Serve with ranch dressing.

Note: I eat these with Hidden Valley Ranch Light Dressing. It's gluten-free!
