Easy Garden Fresh Veggie Sandwiches

This is a fast, super easy sammie or appetizer that is incredibly delicious. The multi-grain bread is the wholesome foundation that adds flavor, texture & goodness to this yummy treat. The creamy avocado mixture, garden veggie cream cheese & crunchy fresh spouts make the perfect filling. You even ‘feel’ healthy when eating these. It just doesn’t get any better than this!

Ingredients

  • 6 slices Nine or Eleven grain bread preferably with nuts
  • 6 tablespoons less fat garden vegetable cream cheese spread
  • 1 large ripe avocado
  • 1/3 cup lite or non-fat sour cream
  • ½ - 1 tsp garlic powder or to taste
  • Salt and pepper to taste
  • 1 cup or more fresh alfalfa sprouts, rinsed and dried

Instructions

  1. Lay out bread on a large cutting board. Spread 2 tablespoons cream cheese on each of three of the slices of bread spreading to edges. Cut avocado in half, remove pit and scoop out avocado meat from the shell into a small bowl. Mash well with a fork and add the sour cream and blend. Add garlic powder and salt and pepper to taste. Blend well. Spread 1/3 of the avocado mixture on each of the other 3 slices of bread spreading just to the crusts. Divide sprouts evenly and spread over tops of avocado on bread slices. Lightly sprinkle salt and pepper over sprouts. Put the cream cheese covered bread slices over the top of the sprouts and avocado and gently press together. Carefully cut off crusts from bread (optional-if desired) and cut into four long ‘fingers’ each. Makes 12 finger sammies or appetizers.
