Couple of years ago, I was in charge of hosting a movie night for my girlfriends . I planned to make spicy chicken fajitas , warm fudgy brownies for dessert and a salad on the side. First , I made the brownie batter, stored it in the fridge intending to bake later. And then proceeded to chop and dice for my fajitas and salad. Just then, I remembered that one of my friend is a huge fan of lettuce wraps . So, I decided to put together a salad in the form of lettuce wraps and got to work right away. Made a batch of my favorite ginger garlic ranch dressing and roasted some garbanzo beans and cashews that I had on hand. We watched one of our all time favorite movies and then proceeded for dinner. The dining room was filled with oohs and aahs from the stunning look . The crispy beans , buttery cashews ,cold dressing and the crunchy veggies worked wonderful together! We filled ourselves with the salad that we were too full for the fajitas. So, we skipped straight to dessert!

Ingredients

  • Ginger Garlic Ranch Dressing
  • 1 cup plain yogurt
  • 1/4 cup mayonnaise
  • 1 teaspoo lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 2 Tablespoons fresh cilantro, finely chopped
  • 2 cloves garlic , grated
  • 1 teaspoon grated ginger
  • 1/8 teaspoon red chili flakes
  • 1 Tablespoon olive oil
  • Garbanzo Beans
  • 2 cans garbanzo beans, drained and rinsed
  • 1/2 cup whole cashews
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 3/4 teaspoon paprika
  • 3 Tablespoons olive oil
  • Salad
  • 1 head Butter lettuce
  • 1/2 cucumber, thinly sliced
  • 1 tomato, chopped into thin wedges
  • 1/2 cup thinly sliced red onion
  • 1 carrot, grated
  • 1 jalapeno pepper, thinly sliced (optional)

Instructions

  1. In a medium bowl whisk together yogurt, mayonnaise, lemon juice, salt ,pepper powder and cilantro . Heat ginger , garlic, chili flakes and olive oil in a small pan over low heat for 1 minute until it sizzles for few seconds . Stir into dressing. Refrigerate for few hours or overnight.
  2. Preheat oven to 375 degrees F. Toss together garbanzo beans, cashews, salt, pepper , paprika and olive oil . Spread on a baking sheet in a single layer and bake for 45 minutes. Cool completely.
  3. Before serving, arrange lettuce, cucumber , tomato,onion. carrot, jalapeno , roasted garbanzo beans and dressing on a platter. Serve family style!
