Bursting with chocolate, no one will ever know that these brownies are loaded with the goodness of Mann’s Broccoli Cole Slaw! That’s right! Broccoli, carrots, and red cabbage in a moist and delicious brownie! These are kid tested. They asked for more… and more… and more!

Ingredients

  • For the Brownines:
  • 2 cups Mann's Broccoli Cole Slaw
  • ¼ cup melted butter
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup all-purpose flour
  • ½ cup unsweetened baking cocoa
  • ½ teaspoon baking powder
  • ½ cup semi-sweet chocolate chips
  • For the Topping:
  • ½ cup semi-sweet chocolate chips
  • ½ cup white morsels

Instructions

  1. Preheat oven to 350° F.
  2. Grease an 8” square baking dish.
  3. Place Mann's Broccoli Cole Slaw® in food processor. Process until very fine.
  4. Transfer to a 2 quart mixing bowl. Add melted butter, granulated sugar, and brown sugar. Stir with a wooden spoon.
  5. Add eggs and vanilla extract. Beat well with a wooden spoon.
  6. In a separate bowl, stir together flour, baking cocoa, baking powder, and ½ cup semi-sweet chocolate chips. Add flour mixture to wet mixture. Stir to combine. Pour into prepared pan.
  7. Bake at 350°F. 25 minutes. Remove from oven.
  8. Sprinkle chocolate chips and white morsels on top.
  9. Let cool 10 minutes, then spread topping with a knife. Cool completely before cutting. Cut into 16 squares.

Notes

For the topping, my chocolate chips melted completely but the white morsels did not. If you'd like a smoother topping, melt the chocolate chips and white morsels together before putting them on top of the brownies.
