These moist, orange-flavored muffins will bring sunshine to anyone’s home. Whether prepared for an everyday family breakfast or for a special brunch event, these muffins will always take center-stage.

Ingredients

  • For the marmalade:
  • 1 cup powdered sugar
  • 1/2 cup butter, at room temperature
  • 2 Tbsp Bonne Maman Orange Marmalade
  • For the muffins:
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup butter, at room temperature
  • 1/2 cup Bonne Maman Orange Marmalade
  • 2 eggs
  • 1/2 cup sugar
  • 1 cup fresh orange juice
  • 1 Tbsp poppy seeds
  • 1/2 cup dried cranberry

Instructions

  1. Pre-heat oven to 375 degrees F. Line a muffin pan with paper liners. You will need enough for 15 muffins.
  2. Using a hand mixer, whip 1/2 cup butter, powdered sugar and 2 Tbsp Bonne Maman Orange Marmalade for about 1 minute or till fluffy. Place in small serving bowl.
  3. Combine flour, baking powder, baking soda and salt in a small bowl. Set aside.
  4. With the hand mixer, mix 1/2 cup butter and 1/2 cup Bonne Maman Orange Marmalade for 1 minute. Add eggs, sugar and orange juice and mix until well combined (mixture will look curdled, but it’s supposed to look like that). Add flour mixture (previously prepared) and mix till combined (about 10-20 seconds; do NOT over mix). Fold in poppy seeds and dried cranberries.
  5. Fill muffin liners with batter and bake in pre-heated oven for about 20 minutes or till golden. Serve with marmalade butter. Enjoy!
