Seafood Salad Lettuce Boats
I love seafood salad from the deli but it is so expensive. I make a replica of it with imitation crab and salad shrimp and it is just as good! Serve it on a lettuce wedge with crackers for an impressive presentation!
Ingredients
- 1/2 cup mayonnaise
- 1/2 cup salad dressing (Miracle Whip type)
- 1 teaspoon sugar
- 1 teaspoon garlic salt
- 1/2 teaspoon pepper
- 2 stalks celery, chopped
- 1/4 red onion, chopped
- 1 pound imitation crab meat
- 1 pound salad shrimp
- 1 head lettuce, cut in 8 wedges
- Crackers, optional
Instructions
- Pulse mayonnaise, salad dressing, sugar, salt, and pepper in blender or chopper until mixed.
- Add celery, onion, and crab. Pulse a few times to relish consistency. Spoon in bowl. Add shrimp and mix together.
- To serve, put a lettuce wedge on a plate. Score the center and pull apart to form a boat. Spoon seafood salad down the center. Serve with crackers, if desired.
Notes
Chopping the celery and onion before adding them to the chopper makes them chop easier.
