Ingredients
For the Kebabs
4 boneless, skinless chicken breast halves
4 kiwi fruits
1 avocado
12 grape tomatoes (may use cherry tomatoes)
For the Marinade
1/4 Cup olive oil
2 Tbsp. lime juice
1 Tbsp. minced garlic
1 tsp. salt
1/2 tsp. pepper
For the Glaze
3 Tbsp. honey
1 Tbsp. canned chipotle chilies in adobo sauce, minced
Instructions
Cut chicken breast halves into thirds. Peel and halve kiwis. Peel avocado and cut into 8 pieces. Place in a shallow pan or large resealable plastic bag along with tomatoes and all marinade ingredients. Toss lightly to thoroughly coat. If using a pan, cover. Marinate in refrigerator for 30 minutes.
Prepare an oiled grill over medium hot coals. Thread chicken, kiwi, avocado and tomato onto skewers, alternating pieces. Each skewer should have 3 pieces chicken, 2 of kiwi, 2 of avocado, and 3 tomatoes. Place on grill.
Stir honey and chilies in a small bowl and brush frequently over kebabs as they cook. Cook kebabs for 8-10 minutes, turning once.
