Bacon-Peanut Butter Grilled Chicken Ramen Bowls

Who doesn’t love peanut butter; who doesn’t love bacon! Try these grilled chicken tenders served over sesame ramen noodles for a quick one bowl delightful dinner.
Ingredients
- 1/4 cup peanut butter
- 1/2 teaspoon ground ginger
- 6 chicken tenders
- 6 slices bacon
- 2 packages of chicken-flavored ramen noodles (do not use spice package)
- 1 cup chicken broth
- 1 teaspoon Sriracha sauce (or to taste)
- 1 Tablespoon sesame oil
- 1 Tablespoon oyster sauce
- 1 Tablespoon Teriyaki sauce
- 2 Tablespoons chopped peanuts
- 2 Tablespoon chopped scallions
Instructions
- Heat grill to medium heat.
- Place peanut butter in a shallow dish and microwave until soft, approximately 20 seconds. Mix in ginger. Coat chicken tenders in peanut mixture and wrap one slice of bacon around each tender, secure with a toothpick.
- Grill chicken tenders until bacon is crisp and chicken juices run clear. Remove from grill and let rest while you prepare the noodles. Remove the toothpicks.
- In a medium sauce pan, heat chicken broth to slow boil, add ramen noodles and simmer for 3-4 minutes. When noodles are soft, stir in Sriracha sauce, sesame oil, oyster sauce and Teriyaki sauce.
- Divide noodles between two bowls. Top each bowl with three chicken tenders. Sprinkle each bowl with chopped peanuts and chopped scallions.
