Caramelized Onion, Cheese and Chorizo Quesadillas

I love quesadillas as appetizers or little plates for parties. They can be prepared ahead of time and reheat when it’s time to serve. You can vary the ingredients to anything you like, as well as the toppings. I also recommend doubling the amount of caramelized onions and saving half for an additional topping.
Ingredients
- 1 Tablespoon olive oil
- 1 Tablespoon salted butter
- 1 large sweet Vidallia onion, peeled and large diced
- 1 Tablespoon sugar
- 9 ounces pork chorizo
- 12 6-inch flour tortillas
- 8 ounces of shredded four-cheese Mexican blend cheese
- 1 pint sour cream
- Fresh chopped chives for garnish
Instructions
- In a medium skillet, over medium heat, add olive oil and butter. Cook until melted. Add diced onions and sugar and mix to combine. Continue to cook over medium low heat for 40-45 minutes until onion and caramelized and deep brown. Remove onion to a bowl and set aside.
- To the same skillet, add pork chorizo, stir and break up with wooden spoon. Cook thoroughly about 7-9 minutes. Add to bowl with onion and mix to combine.
- In the same skillet, over medium heat, spread 2-3 tablespoons of chorizo, onion mixture onto one tortilla and place in the skillet, top with a handful of the four-cheese blend and top with another tortilla. Cook 3-4 minutes per side until the cheese is melted. Remove to cutting board and repeat with remaining tortillas.
- Cut each tortilla into 4 pieces and serve with sour cream garnished with chives.
Notes
Make Ahead - the onions and chorizo filling can be made a day ahead of time and then warmed up when it is time to make the quesadillas.
