Red Pepper Peach Mango Salsa Bites
Parties can be labor intensive especially when a variety of appetizers are served. I have learned, finger foods made in advance that look like I made a fuss and are party ready are best. I developed this recipe with that in mind. On a serving tray the appetizer looks amazing. This recipe is sure to be a crowd pleaser.
Ingredients
- 1 tablespoon olive oil
- 3 tablespoons finely chopped red onion
- 1/2 cup finely diced red bell pepper
- 3 tablespoons peach mango preserves
- 1 1/2 tablespoons apple cider vinegar
- 1/4 teaspoon Sriracha sauce
- 1/4 teaspoon lime zest
- 1 teaspoon lime juice
- 3 tablespoons chopped fresh cilantro, divided
- 1 refrigerated pie crust from a 14.1 oz box
- 2 ounces cream cheese, cut into 16 cubes
Instructions
- Heat olive oil In a small nonstick skillet over medium high heat, Add onion and red bell pepper; cook 3 minutes or till tender. Add preserves, vinegar and Sriracha sauce. Cook and stir 2 to 3 minutes or till thickened, cutting up any large preserve pieces while cooking. Remove from heat; cool slightly. Stir in lime zest, lime juice and 2-tablespoons cilantro.
- Heat oven to 400F. Line a cookie sheet with parchment paper. On a lightly floured surface, roll dough from center to corners to create a 11 x 11-inch square. Patch corners and trim dough edges as needed to make the square. Cut 4 rows by 4 rows ( each 2 3/4 x 2 3/4- inch square).
- In center of each pastry square, spoon 1/2 teaspoon pepper salsa mixture, top with 1 cheese cube. Moisten square edges with water. Bring 4 corners of square to top, pressing moistened edges together. Place on cookie sheet 1-inch apart. Bake 14 to 17 minutes or until golden brown.
- Remove from oven. Top appetizer with remaining pepper salsa mixture; cool. Sprinkle with remaining cilantro, transfer to platter and serve.
Notes
Preparation Suggestion: Overlap two sheets of 8 1/2 x 11-inch paper to make an 11-inch square template for trimming dough. Fold paper in half and in fourths to cut rows.
I threw a batch of these together one afternoon while babysitting my siblings. They went in the oven as we were starting a movie, and all but two of them were gone by the time the movie ended. They were a smash hit; SOOOOOOOOO yummy, like something from a restaurant. They were really easy, and lots of fun to make! This week I’m going to try making them again, but instead of spicy salsa, I’m going to use plum preserves for a different twist.
