Smokey Salmon and Veggie Pinwheels

These savory snacking beauties are gluten-free, low carbohydrate, high protein and omegas, and can be made paleo-friendly. They are quick and simple to make, and perfect for an impressive company appetizer or for movie night in your pajamas. You won’t even notice they are slimming, since they are so satisfying and fun to eat!
Ingredients
- 1 large seedless hothouse cucumber
- 2 tablespoons whipped cream cheese
- 2 teaspoons chives, finely chopped
- 10 large back or green olives (from a can, jar, or olive bar), pitted
- 4 ounces sliced smoked salmon
- 10 whole fresh chives (optional)
Instructions
- Using a vegetable peeler, peel 10 long, thin strips that are the whole width of the cucumber from one end to the other. Place on paper towels, and gently pat dry. Set aside.
- Meanwhile, in a small bowl, mix cream cheese and chopped chives. Place mixture in a zippered plastic bag. Snip one small bottom corner off the bag. Pipe cream cheese into the hole of each olive until it is completely filled. Set aside.
- Cut salmon into strips approximately the same width as the cucumber. Place salmon strips on top of cucumber strips. At one end of each roll, place 1 stuffed olive on top of the salmon. Start rolling from the olive end all the way to the other end. Secure pinwheel with one long chive (tied at the top) or with a toothpick. Serve immediately or refrigerate until ready to serve.
Notes
To make the pinwheels paleo diet friendly, omit cheese and use a pimento stuffed olive instead.
