Acai Passion Colada de Avena

Acai berries are reported to be a superfruit. Like other berries, they are said to be rich in antioxidants, vitamins C and A, potassium and a lot more. Like acai , passion fruit is reportedly a good source of vitamin C, , fiber, and…passion. But most of all, they are both delicious in a smoothie. Add more agave syrup, to taste if you like; but this smoothie shouldn’t be too sweet.
Ingredients
- 4 tablespoons plus 1 teaspoon, organic oats, regular or steel cut
- sea salt
- 16 ounces unsweetened coconut water (not coconut milk), plus more for later, canned or packaged, such as Vita Coco
- one 2” stick cinnamon
- 2 tablespoons organic agave syrup, or to taste
- 1-2 fresh passion fruits, enough for 3-1/2 tablespoons puree, or substitute frozen puree*
- 8 ounce bottle acai berry juice, or frozen acai puree, diluted
- a pinch of ground cinnamon (optional)
Instructions
- Soak oats in 1 cup coconut water, 4 hours or up to 24 hours. Add to a 2 - 3 quart saucepan with remaining coconut water, cinnamon stick and agave syrup. Bring to the boil, reduce heat and simmer 8-10 minutes until smooth and thickened. Add a small pinch of sea salt. Cool completely. Remove cinnamon stick. If using fresh passion fruits, scoop out flesh and push through a strainer; discard seeds. In blender container, combine cooled oats, passion fruit puree, and acaj berry juice Blend until very smooth. Thin if you like, with additional coconut water . Serve cold in warm weather, or warm in cold weather, with a sprinkle of ground cinnamon added just before service. Garnish, if you like, with seasonal fresh berries.
Notes
To save time, oats can be cooked in advance and refrigerated until ready to assemble the smoothie. Add additional water, as oats will have thickened upon standing.
If using steel-cut oats, simmer 30 minutes.
If you do not have fresh passion fruits, or frozen puree (sold in Latin American markets ) Goya passion fruit nectar is fine. Reduce 7 tablespoons (1/2 cup minus 1 T.) passion fruit nectar to 3-1/2 tablespoons over moderate heat.
Recipe can be doubled or tripled, as needed.
