Chicken Breast with Broccoli Gremolata over Pappardelle Pasta
This is not your mama’s gremolata! The base is made with Mann’s Broccoli Cole Slaw, it’s aromatic and delicious. For my purposes I used chicken breasts and hard amber durum wheat pappardelle pasta, this would also be great with a nice steak and polenta.
Ingredients
- Gremolata
- 1/2 package Mann's Broccoli Cole Slaw
- 2 lemons, zested and reserve 2 tablespoons lemon juice
- 3 tablespoons minced garlic
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 4 roasted skinless boneless chicken breasts
- 8 ounce prepare hard amber durum wheat pappardelle, buttered
- 8 large caper berries
Instructions
- In the bowl of food processor place the Broccoli cole slaw, zest of 2 lemons, minced garlic, olive oil, salt and 2 tablespoons lemon juice.
- Pulse until combined.
- To build make a nest of prepared pappardelle and top with a chicken breast.
- Follow with 1/4 cup of gremolata and 2 caper berries.
