Chicken Breast with Broccoli Gremolata over Pappardelle Pasta

This is not your mama’s gremolata!  The base is made with Mann’s Broccoli Cole Slaw, it’s aromatic and delicious.  For my purposes I used chicken breasts and hard amber durum wheat pappardelle pasta, this would also be great with a nice steak and polenta.

Ingredients

  • Gremolata
  • 1/2 package Mann's Broccoli Cole Slaw
  • 2 lemons, zested and reserve 2 tablespoons lemon juice
  • 3 tablespoons minced garlic
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 4 roasted skinless boneless chicken breasts
  • 8 ounce prepare hard amber durum wheat pappardelle, buttered
  • 8 large caper berries

Instructions

  1. In the bowl of food processor place the Broccoli cole slaw, zest of 2 lemons, minced garlic, olive oil, salt and 2 tablespoons lemon juice.
  2. Pulse until combined.
  3. To build make a nest of prepared pappardelle and top with a chicken breast.
  4. Follow with 1/4 cup of gremolata and 2 caper berries.
