Asian Snappy Shrimp and Broccoli Slaw Sensational Stir-Fry
Can dinner be made in less than 10 minutes? You bet! Mann’s fresh snap peas and broccoli cole slaw make this quick stir-fry a 6-minute sensation! Fresh veggies are seasoned with the Asian dressing and sesame seeds, included in the Sensations package. Stir-fry shrimp, snap peas, and broccoli cole slaw for just 6 minutes, toss with sesame seeds, toasted almonds, and a splash of lime juice and dinner is served! Oh my, that was fast!
Ingredients
- Snappy Asian Shrimp and Broccoli Slaw Sensational Stir-Fry
- 1 (10.1 oz) package Mann’s Asian Sesame Snap Pea Sensations®
- 1/2 pound medium raw shrimp, shelled, deveined, tails removed
- 1 tablespoon peanut oil or cooking oil of choice
- 3 cups Mann’s Broccoli Cole Slaw®
- 1/8 teaspoon crushed red pepper flakes
- 1 green onion, diced
- 2 tablespoons dry toasted sliced almonds
- I/2 lime, sliced
- salt (if needed) and freshly ground black pepper
- 2 tablespoons small basil leaves
Instructions
- Remove the Asian dressing packet from the package of Mann’s Asian Sesame Snap Pea Sensations. In a bowl, toss the shrimp with Asian dressing and set aside.
- In a large skillet, over medium high, heat the oil. Lift the shrimp from the dressing with a slotted spoon, reserving the dressing. Place shrimp in hot oil and sauté for 3 minutes on one side. Turn shrimp over and cook for 1 minute. Add snap peas, broccoli cole slaw, red pepper flakes, and reserved dressing. Stir-fry for 2-3 minutes or until shrimp is opaque in the center and snap peas are tender fresh.
- Stir in green onion, almonds, and pack of sesame seeds from the Mann’s Snap Pea package. Sprinkle with freshly ground black pepper. Salt to taste. Squeeze lime juice over stir-fry and serve with lime slices. Garnish with basil leaves.
Notes
Variation: Stir in 2 teaspoons of grated lemongrass when broccoli cole slaw is added.
If 3 servings are desired, cook 12 ounces shrimp and 4 cups of broccoli slaw. One package of Snap Pea Sensations will be plenty.
If 4 servings are desired, cook 16 ounces shrimp and 5 cups of broccoli slaw. One package of Snap Pea Sensations will be sufficient.
