Chicken Kebabs with Honey-Chipotle Glaze

Kiwi fruit contains a fabulous enzyme that tenderizes meat, breaking down connective tissue. When placed next to chicken, it makes it melt in your mouth!
Ingredients
- For the Kebabs
- 4 boneless, skinless chicken breast halves
- 4 kiwi fruits
- 1 avocado
- 12 grape tomatoes (may use cherry tomatoes)
- For the Marinade
- 1/4 Cup olive oil
- 2 Tbsp. lime juice
- 1 Tbsp. minced garlic
- 1 tsp. salt
- 1/2 tsp. pepper
- For the Glaze
- 3 Tbsp. honey
- 1 Tbsp. canned chipotle chilies in adobo sauce, minced
Instructions
- Cut chicken breast halves into thirds. Peel and halve kiwis. Peel avocado and cut into 8 pieces. Place in a shallow pan or large resealable plastic bag along with tomatoes and all marinade ingredients. Toss lightly to thoroughly coat. If using a pan, cover. Marinate in refrigerator for 30 minutes.
- Prepare an oiled grill over medium hot coals. Thread chicken, kiwi, avocado and tomato onto skewers, alternating pieces. Each skewer should have 3 pieces chicken, 2 of kiwi, 2 of avocado, and 3 tomatoes. Place on grill.
- Stir honey and chilies in a small bowl and brush frequently over kebabs as they cook. Cook kebabs for 8-10 minutes, turning once.
Notes
Kebabs are a fun change from usual grilling fare, and this spicy-yet-sweet marriage of flavors is a refreshing surprise as well. The super shiny result always dazzles guests, and everyone will wonder how you kept the chicken so incredibly tender!
