Mann’s Broccoli Cole Slaw makes a delicious topping for pizza. A quick sauté adding Italian flavors and seasoning with a pasta or noodle crust results in an easy nutritious meal that is on the table in minutes.

Ingredients

  • 4 cups cooked spaghetti or noodles
  • 1 egg, beaten
  • 2 Tbsp olive oil, divided
  • 1/4 cup chopped onion
  • 1/4 cup chopped red bell pepper
  • 1/2 tsp dried Italian seasoning herbs
  • 1 package ( 12 ounces) Mann's Broccoli Cole Slaw
  • 1/4 cup chopped prosciutto
  • 1 Tbsp capers
  • 1 tsp lemon zest
  • 1/4 cup crumbled fresh goat cheese
  • garnish- Kalamata olives, basil sprig and white balsamic vinegar

Instructions

  1. In a medium bowl mix together the spaghetti or noodles with the egg and 1 Tbsp of the oil till well combined.
  2. Put into a 12 inch pizza pan sprayed with nonstick cooking spray and bake at 375 degrees 15 minutes.
  3. While the crust is baking heat the remaining oil in a large skillet over medium high heat.
  4. Add the onion, pepper, herb seasoning and broccoli cole slaw; saute 3 minutes.
  5. Remove the pan from the heat and stir in the prosciutto, capers and zest.
  6. Top the crust with the seasoned slaw mixture then sprinkle on the goat cheese.
  7. Garnish the pizza with the olives, basil and a drizzle of white balsamic vinegar; cut into wedges and serve.
