Whole Wheat Zucchini Bread

This whole wheat zucchini bread with walnuts can be enjoyed by the slice for breakfast or as an afternoon snack.
Ingredients
- 2 cups whole wheat flour
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon ground ginger
- 2 eggs
- 2/3 cup canola oil
- 2/3 cup unsweetened applesauce
- 1/4 cup non-fat plain Greek yogurt
- 1-1/2 cups sugar
- 4 teaspoons vanilla extract
- 2 cups grated zucchini
- 2/3 cup finely chopped walnuts
Instructions
- Preheat oven to 325°F. Spray 2 8-inch loaf pans with natural cooking spray and set aside.
- In a large bowl, combine whole wheat flour, all-purpose flour, salt, baking soda, baking powder, cinnamon, nutmeg and ginger.
- In a separate large bowl, whisk together egg, oil, applesauce, yogurt, sugar and vanilla. Add flour mixture and stir until well combined. Fold in zucchini and walnuts then transfer batter to prepared pans and bake until risen, deep golden brown and a toothpick inserted in the middle comes out clean, 50 to 60 minutes.
