These moist, orange-flavored muffins will bring sunshine to anyoneโ€™s home. Whether prepared for an everyday family breakfast or for a special brunch event, these muffins will always take center-stage.

Ingredients

  • For the marmalade:
  • 1 cup powdered sugar
  • 1/2 cup butter, at room temperature
  • 2 Tbsp Bonne Maman Orange Marmalade
  • For the muffins:
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup butter, at room temperature
  • 1/2 cup Bonne Maman Orange Marmalade
  • 2 eggs
  • 1/2 cup sugar
  • 1 cup fresh orange juice
  • 1 Tbsp poppy seeds
  • 1/2 cup dried cranberry

Instructions

  1. Pre-heat oven to 375 degrees F. Line a muffin pan with paper liners. You will need enough for 15 muffins.
  2. Using a hand mixer, whip 1/2 cup butter, powdered sugar and 2 Tbsp Bonne Maman Orange Marmalade for about 1 minute or till fluffy. Place in small serving bowl.
  3. Combine flour, baking powder, baking soda and salt in a small bowl. Set aside.
  4. With the hand mixer, mix 1/2 cup butter and 1/2 cup Bonne Maman Orange Marmalade for 1 minute. Add eggs, sugar and orange juice and mix until well combined (mixture will look curdled, but itโ€™s supposed to look like that). Add flour mixture (previously prepared) and mix till combined (about 10-20 seconds; do NOT over mix). Fold in poppy seeds and dried cranberries.
  5. Fill muffin liners with batter and bake in pre-heated oven for about 20 minutes or till golden. Serve with marmalade butter. Enjoy!
