Susan suggests several ways to repurpose the leftovers from this dish. ย “Mix into softly scrambled eggs, or tuck into home-made sushi.ย  Or serve the classic bagel and cream cheese combo.ย ย  Any remaining vinaigrette is nice for potato salad, adding salt to taste.”
