Apple Raspberry Pie Smoothie

This smoothie was inspired by one of our favorite pies: Apple Raspberry.

Ingredients

  • 3 Tablespoons golden raisins
  • 1 Tablespoon frozen apple juice concentrate
  • 1 Tablespoon coconut oil
  • 1 medium sweet/tart apple, such as Honeycrisp
  • 1/2 cup plain Greek yogurt
  • 1/3 cup frozen raspberries
  • 2 Tablespoons old-fashioned oats
  • 1 Tablespoon ground flax seed
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon freshly grated nutmeg
  • 1/8 teaspoon almond extract
  • 1 cup ice cubes
  • 1/8 teaspoon chia seeds for Garnish

Instructions

  1. Place raisins and apple juice concentrate in a small microwave-safe bowl; heat on High power until boiling, about 30 seconds. Stir in coconut oil and let stand while continuing with recipe.
  2. Remove core from apple, coarsely chop apple and put into a heavy-duty blender. Add yogurt, raspberries, oats, flax, cinnamon, nutmeg, almond extract and raisin mixture (including all liquid.) Blend, adding ice cubes as directed by blender instructions, until desired consistency is achieved. Divide into two glasses and sprinkle with chia seeds. Makes 2 smoothies.
