Blackberry, Mango and Mache Salad with Yogurt Dressing

This colorful, healthy salad, with sweet and creamy mangoes, luscious blackberries, blueberries and raspberries and sweet mache greens, is a snap to make. It is dressed with a vibrant citrus, honey, ginger, mango yogurt dressing. Just add grilled shrimp, or mahi mahi for a light and refreshing lunch or dinner.
Ingredients
- For the dressing,
- 2 teaspoons finely chopped crystallized ginger
- 1/4 cup mango puree, or nectar
- 2 Tablespoons lemon juice
- 2 Tablespoons orange juice
- zest of 1 lemon (preferably organic)
- 2-3 Tablespoons blossom mild honey
- 1 cup plain, or vanilla Greek yogurt
- For the salad,
- 4 cups mache blend salad greens, or other sweet micro greens, bite size
- 2 ripe Ataulfo mangoes, peeled, cut into strips
- 1/2 cup blackberries
- 1/2 cup blueberries
- 1/2 cup raspberries
- 2 sprigs fresh mint, finely chopped and garnish
Instructions
- Prepare the dressing. In a medium bowl, stir together all dressing ingredients, other than yogurt. Divide equally into 2 small bowls. Add yogurt to one half, stir to blend. Cover, set aside.
- Prepare the Salad. Toss the non-yogurt dressing with the Mache salad greens and 1 teaspoon chopped mint. Arrange on a large serving platter.
- Place mango slices in a concentric circle around the greens. Decoratively arrange the blackberries, blueberries and raspberries around the platter.
- Transfer the yogurt dressing to a small serving bowl. Serve on the side with salad, and optional glass of cool mango nectar.
