Greek Islands Salad with Lemon-Oregano Vinaigrette
Enjoying this Greek Islands Salad at lunch time will whisk you away to Santorini! (If only for a few minutes…)
Ingredients
- Lemon-Oregano Vinaigrette
- 1 garlic clove, pressed
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup lemon juice
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- Greek Islands Salad
- Chopped tomatoes
- Chopped cucumber
- Black olives
- Feta cheese
- Cooked orzo pasta
- Romaine lettuce
Instructions
- In a medium bowl, combine garlic, oregano, salt, pepper, lemon juice and red wine vinegar. While whisking, stream in olive oil.
- In a large bowl, combine tomatoes, cucumber, black olives, Feta cheese, orzo and romaine lettuce. Toss with desired amount of prepared dressing.
