Greek Islands Salad with Lemon-Oregano Vinaigrette

Enjoying this Greek Islands Salad at lunch time will whisk you away to Santorini!  (If only for a few minutes…)


  • Lemon-Oregano Vinaigrette
  • 1 garlic clove, pressed
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup lemon juice
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • Greek Islands Salad
  • Chopped tomatoes
  • Chopped cucumber
  • Black olives
  • Feta cheese
  • Cooked orzo pasta
  • Romaine lettuce


  1. In a medium bowl, combine garlic, oregano, salt, pepper, lemon juice and red wine vinegar. While whisking, stream in olive oil.
  2. In a large bowl, combine tomatoes, cucumber, black olives, Feta cheese, orzo and romaine lettuce. Toss with desired amount of prepared dressing.

    Yassou Kristina, this salad took me back to every Greek Island I was fortunate to visit every year I vacationed….thanks for helping me to relive those fantastic days, oh such gastronomic experiences. I followed your recipe 100%, but added several pepperoni peppers on the side. Thanks again!!!! Kostantina.
