BLT Bites with Garlic Aioli

Using just a little piece of bacon keeps this recipe light but flavorful. It’s like a BLT sandwich without all the bread.

Ingredients

  • For the bacon
  • 1 lb Thick Sliced Bacon
  • Chili Powder
  • Ground Allspice
  • Dark Brown Sugar
  • For the Aioli
  • 1 egg
  • 1 Tbsp fresh lemon juice
  • 1 clove garlic, minced
  • ยฝ tsp Dijon mustard
  • ยฝ - ยพ cup Extra Virgin Olive Oil
  • Salt & Pepper to taste
  • Now the rest
  • 1 head Belgium Endive, leaves removed and larger leaves halved horizontally
  • Cherry Tomatoes, halved

Instructions

  1. Heat oven to 350. Place bacon on a parchment covered rimmed baking sheet. Sprinkle both sides generously with chili powder and lightly with ground allspice. Spread a thin layer of dark brown sugar (about 2 Tbsp per slice) on the โ€œupโ€ side of the bacon. Bake for approximately 25-30 minutes, or until almost firm but still โ€œbendableโ€. Once cool enough to handle cut into 1 โ€“ 1 ยฝ โ€œ pieces.
  2. While bacon is cooking make the aioli. In a blender add the egg, lemon juice, garlic and mustard and blend until combined. With the blender running on low, begin adding the oil very slowly and blend until completely incorporated. Season to taste with salt and pepper.
  3. To serve, place the endive pieces on a platter. Top with a piece of bacon and a tomato half. Then drizzle with aioli.
