This Cast Iron Chorizo Breakfast Recipe, easy to make and packed with south of the border flair and flavor!

Ingredients

  • For the Chorizo
  • 1 lb ground pork shoulder
  • 1 tsp Mexican oregano
  • 1/2 onion chopped
  • 2 garlic cloves chopped
  • 1/2 tsp cayenne pepper
  • 1 tsp paprika
  • 1 tsp cumin
  • 2 tsp canola oil
  • 1/4 cup water
  • 1/2 tomato chopped
  • For the Breakfast
  • 2 eggs
  • 1/2 cup Monterrey shredded cheese
  • 1 tbs fresh cilantro chopped
  • salt and pepper to taste

Instructions

  1. Heat a cast iron skillet on medium high, add oil, onions cook for a minute, add garlic, cook for a minutes, add all the spices ,salt, pepper and the water, mix well and turn it off. Let it cool. Mix the pork with the red sauce. Let it set for a while.
  2. Cook chorizo, add tomato, mix until well done. Make two over easy eggs add salt and pepper(or your favorite style eggs), top with chorizo, cheese and cilantro. Serve with black or pinto refried beans. Enjoy!
