Cheesy Home Fry Skillet
This super easy, one pan, recipe comes together in just a few minutes thanks to frozen diced potatoes and onions. It’s delicious and perfect for brunch.
Ingredients
- 20 oz bag Diced Potatoes with Onion
- 1 stick butter
- 12 oz mild cheddar cheese, grated
- 2 cups sour cream
- Kosher salt & freshly ground black pepper
Instructions
- Preheat oven to 450 degrees F.
- Melt 1 stick of butter in a large cast iron skillet over medium high heat.
- Add 1 bag of Simply Potato Diced Potatoes and onion. Saute until well heated & lightly browned.
- Remove from heat and stir in the cheese, sour cream and salt and pepper to taste.
- Move skillet to oven and bake for about 45 minutes or until edges are dark brown and top is golden brown.
