This super easy, one pan, recipe comes together in just a few minutes thanks to frozen diced potatoes and onions. It’s delicious and perfect for brunch.

Ingredients

  • 20 oz bag Diced Potatoes with Onion
  • 1 stick butter
  • 12 oz mild cheddar cheese, grated
  • 2 cups sour cream
  • Kosher salt & freshly ground black pepper

Instructions

  1. Preheat oven to 450 degrees F.
  2. Melt 1 stick of butter in a large cast iron skillet over medium high heat.
  3. Add 1 bag of Simply Potato Diced Potatoes and onion. Saute until well heated & lightly browned.
  4. Remove from heat and stir in the cheese, sour cream and salt and pepper to taste.
  5. Move skillet to oven and bake for about 45 minutes or until edges are dark brown and top is golden brown.
