Crispy Asian Seared Salmon Salad

This refreshing salad is hearty enough for a supper main dish, yet glamorous enough for a ladies’ luncheon. And everyone LOVES the delicious Asian flavors!

Ingredients

  • 1 lb. salmon filet
  • 1/2 cup sesame oil
  • 1/2 cup plum sauce
  • 1/2 cup lemon juice
  • 1/2 cup honey
  • 3 Tablespoons soy sauce
  • 2 teaspoons red pepper flakes
  • 6 cups chopped romaine lettuce
  • 2 cups yellow or red cherry tomatoes
  • 1 cup pitted black olives
  • croutons

Instructions

  1. Cut salmon into bite-sized pieces. In a large skillet over high heat, sear salmon pieces in 3 Tablespoons of the sesame oil, until crispy on both sides and barely opaque in center.
  2. Combine remaining sesame oil, plum sauce, lemon juice, honey, soy sauce, and red pepper flakes to form dressing. Toss with romaine, tomatoes, olives, croutons and cooked salmon.
