Crispy Asian Seared Salmon Salad
This refreshing salad is hearty enough for a supper main dish, yet glamorous enough for a ladies’ luncheon. And everyone LOVES the delicious Asian flavors!
Ingredients
- 1 lb. salmon filet
- 1/2 cup sesame oil
- 1/2 cup plum sauce
- 1/2 cup lemon juice
- 1/2 cup honey
- 3 Tablespoons soy sauce
- 2 teaspoons red pepper flakes
- 6 cups chopped romaine lettuce
- 2 cups yellow or red cherry tomatoes
- 1 cup pitted black olives
- croutons
Instructions
- Cut salmon into bite-sized pieces. In a large skillet over high heat, sear salmon pieces in 3 Tablespoons of the sesame oil, until crispy on both sides and barely opaque in center.
- Combine remaining sesame oil, plum sauce, lemon juice, honey, soy sauce, and red pepper flakes to form dressing. Toss with romaine, tomatoes, olives, croutons and cooked salmon.
