Crispy Bacon Fried Rice
This rice is a bacon lover’s dream!
Ingredients
- 5 strips of bacon
- 3 greens onion chopped, tops only
- 2 1/2 cups of cold cooked white rice
- 1 tablespoon soy sauce
- 1 egg, beaten
- 1/3 cup chopped cherry tomatoes
Instructions
- In large skillet fry bacon until crispy. Remove bacon from skillet. Do not discard bacon grease. Crumble bacon and set aside.
- In the large skillet heat the bacon grease over medium-high heat.
- Add green onions and cook for about 30 seconds. Stir in rice and bacon for 2 minutes. Combine soy sauce until well mixed.
- Add the egg, breaking up the egg with a spoon. Stir in tomatoes. Cook about 2 minutes. Serve hot.
Notes
The combination of the bacon and tomatoes add a great flavor.
