This rice is a bacon lover’s dream!

Ingredients

  • 5 strips of bacon
  • 3 greens onion chopped, tops only
  • 2 1/2 cups of cold cooked white rice
  • 1 tablespoon soy sauce
  • 1 egg, beaten
  • 1/3 cup chopped cherry tomatoes

Instructions

  1. In large skillet fry bacon until crispy. Remove bacon from skillet. Do not discard bacon grease. Crumble bacon and set aside.
  2. In the large skillet heat the bacon grease over medium-high heat.
  3. Add green onions and cook for about 30 seconds. Stir in rice and bacon for 2 minutes. Combine soy sauce until well mixed.
  4. Add the egg, breaking up the egg with a spoon. Stir in tomatoes. Cook about 2 minutes. Serve hot.

Notes

The combination of the bacon and tomatoes add a great flavor.
