Dark Chocolate Bacon Pecan Florentines with Greek Yogurt
Salty, sweet and crunchy cookie cylinder filled with tangy and smooth Greek yogurt.
Ingredients
- 1/2 cup all purpose flour
- 1/2 cup ground pecans
- 1/4 cup finely chopped crisp cooked bacon
- 2 tablespoons dark corn syrup
- 1/4 cup sugar
- 1/4 cup unsalted butter
- 1 ounce bittersweet chocolate
- 1/2 teaspoon vanilla
- 1 container thick Greek yogurt
Instructions
- Heat oven 325F.
- In small bowl, combine flour, pecans and salt; set aside.
- In small saucepan, over medium heat, combine corn syrup, sugar, butter and chocolate; cook, stirring, just until mixture comes to a boil. Remove from heat; stir in vanilla. Add pecan mixture; blend well.
- To make rolled shells: drop mixture by rounded teaspoonfuls 3-inches apart on ungreased baking sheet. Allow only 6 cookies per baking sheet. Bake 9 minutes. Cool on pan on wire rack for 1 minute. With a metal spatula, scoop up a warm cookie and quickly roll around the handle of a wooden spoon. Let cookie cool a few seconds before sliding onto rack to cool completely. Repeat with remaining warm cookies. Cool completely.
- Fill with yogurt and serve.
