Easy Cheesy Artichoke Crostini

These little crostini pack a lot of flavor without a lot of calories.

Ingredients

  • 1 French Baguette, sliced in half long ways, cut into 2” pieces
  • Olive Oil Spray
  • 6 ounce sharp white cheddar, grated
  • 2 cups roughly chopped marinated artichoke hearts
  • ½ cup finely chopped pickled jalapeno peppers
  • ½ cup finely chopped roasted red peppers
  • 1 Tablespoon minced garlic
  • 1 Tablespoon Dijon mustard
  • ½ cup light mayonnaise

Instructions

  1. Heat oven to 375. Place baguette slices on a cooking sheet and spray the tops generously with olive oil spray. Bake until golden brown, about 15 minutes.
  2. In the meantime, place the remaining ingredients in a medium sized bowl. Stir well to combine.
  3. Once the bread is toasted, generously top each slice with a scoop of the cheese and artichoke mixture. Return to the oven and bake until the cheese is melted and the tops are just starting to brown, about 15 minutes.
