Easy Cheesy Artichoke Crostini
These little crostini pack a lot of flavor without a lot of calories.
Ingredients
- 1 French Baguette, sliced in half long ways, cut into 2” pieces
- Olive Oil Spray
- 6 ounce sharp white cheddar, grated
- 2 cups roughly chopped marinated artichoke hearts
- ½ cup finely chopped pickled jalapeno peppers
- ½ cup finely chopped roasted red peppers
- 1 Tablespoon minced garlic
- 1 Tablespoon Dijon mustard
- ½ cup light mayonnaise
Instructions
- Heat oven to 375. Place baguette slices on a cooking sheet and spray the tops generously with olive oil spray. Bake until golden brown, about 15 minutes.
- In the meantime, place the remaining ingredients in a medium sized bowl. Stir well to combine.
- Once the bread is toasted, generously top each slice with a scoop of the cheese and artichoke mixture. Return to the oven and bake until the cheese is melted and the tops are just starting to brown, about 15 minutes.
