Grilled Basil Pesto Chicken Salad

This “Grilled Basil Pesto Chicken Salad” is a hearty meal in and of itself!
Ingredients
- For the chicken
- 1 large chicken breast - butterfly cut it so it's wide and quick to grill
- 1/4 cup prepared basil pesto spread
- For the salad
- 3-4 cups mixed greens
- 10 cherry tomatoes cut in half
- 1/2 cucumber cut in bite-size pieces
- 1/4 cup fresh Parmesan cheese
- Sauteed Peppers and Onions
- 3 sweet mini peppers (yellow, orange, red)
- 1/2 cup onion, sliced
- 3 Tablespoons olive oil
- For the dressing
- 1/2 lemon, squeezed
- 1/4 cup olive oil
- Sea salt and pepper to taste
Instructions
- Heat oil in skillet and saute peppers and onions. Set side.
- Slice your chicken breast long ways so it's butterflied out for easy quick grilling. When it's almost done, spread the basil pesto spread on top and cook for 1 more minute on the grill. Remove from grill and set aside.
- In large bowl, combine lettuce, tomatoes, cucumbers, and Parmesan cheese.
- Combine dressing ingredients and pour over salad.
- Top with sautรฉed veggies and chicken.
