Softened kale with juicy cantaloupe and tart pomegranates – this is a salad that turns greens-haters into greens-lovers. I think the bright colors draw them in and then just a taste hooks them.

Ingredients

  • 1 cup pomegranate juice
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup olive oil
  • 8 ounces kale, stems removed, torn into small pieces
  • 2 cups cubed cantaloupe
  • 1/4 cup pomegranate seeds
  • 2 tablespoons toasted pine nuts

Instructions

  1. In small saucepan, boil pomegranate juice until it is reduced to about 2 tablespoons. Whisk in balsamic vinegar, lemon juice, honey, mustard, salt, pepper and olive oil. Remove 2 tablespoons dressing; reserve remaining dressing in a pitcher for serving.
  2. Place kale into large bowl; pour 2 tablespoons dressing over it. Massage kale between your hands to coat it thoroughly with dressing. Distribute cantaloupe on the salad. Sprinkle with pomegranate seeds and pine nuts. Serve immediately or refrigerate until serving. Pass extra dressing at the table.
