Mini Banoffee Coffee Pie Bites

Luscious dulce de leche, fresh banana and coffee whipped topping sit atop a light and flaky mini pie crust. This one-bite wonder will be a huge hit at your next party. Big flavor in a small bite!
Ingredients
- 1 cup heavy whipping cream
- 1 1/2 teaspoons instant coffee granules
- 1/2 cup vanilla flavored frosting
- 2 refrigerated pie crusts
- 1/2 cup dulce de leche
- 1 large banana, cut into 24 slices about 1/4 inch thick
- 1/4 cup toffee bits
Instructions
- In a medium bowl, beat heavy whipping cream, instant coffee granules and frosting with electric mixer on high speed until stiff peaks form. Spoon whipped topping into a 1 gallon re-sealable food storage bag and refrigerate while making crusts.
- Heat oven to 450 degrees. Unroll pie crusts onto clean, flat surface. Use a 2 inch round cutter to cut 24 mini crust rounds from crusts. Press each round into the bottom and up the side of an ungreased mini muffin cup. Prick each crust several times.
- Bake 4 to 7 minutes or until light golden brown. Cool completely. Remove crusts from pan when cooled.
- In a small microwavable bowl, microwave dulce de leche on high setting for 15-20 seconds or until soft enough to spoon. Spoon about 1 teaspoon dulce de leche into each crust. Place a banana slice over the dulce de leche layer of each crust. Remove whipped topping from refrigerator. Cut 1 of the bottom corners from food storage bag. Pipe whipped topping over the banana layer of each crust.
- To serve, transfer mini pies to a large serving platter and garnish with toffee bits. Store covered in refrigerator.
