Mint Condition Coconut Cooler

An Asian inspired smoothie.

Ingredients

  • 2 small peeled kiwi fruit
  • 2 cups chilled unsweetened coconut milk beverage (from resealable carton not canned)
  • 1 cup plain low fat or non fat Greek yogurt
  • 1/4 cup fresh mint leaves
  • 1 teaspoon green tea powder (matcha)
  • 1 drop Pandan extract, optional
  • 2 tablespoons unsweetened large flaked coconut, toasted

Instructions

  1. Slice off two 1/4-inch rounds from 1 of the kiwis, set aside for garnishment. Place remaining kiwi in blender along with coconut milk, yogurt, mint leaves, green tea powder and pandan extract if using. Whirl blender on high until mixture is smooth. To serve pour smoothie into 2 tall glasses, garnish rim with reserved kiwi slices and coconut flakes.

Notes

Pandan extract is used often in Thai food and gives a distinctive flavor to desserts and curry dishes. It is available in Asian markets and on line.
