I absolutely LOVE smoothies, but was having a hard time finding smoothies that would fit into my dietary (diabetic)guidelines. They all had too many carbs and not enough nutrition. This particular smoothie does it with flying colors. Don’t be intimidated by the fresh spinach in the smoothie – you won’t even taste it! I like my smoothies partly frozen, so I freeze the spinach, mint and all the fruit (banana and Mango).

Ingredients

  • 1 1/2 cups fresh spinach
  • 1/2 cup fresh mint leaves
  • 1 small banan
  • 1 cup frozen mango chunks
  • 1 tbsp chia seeds (or 2 tbsp ground flax seed)
  • 3 oz plain greek yogurt
  • 5 ice cubes
  • 1/3 cup lime juice
  • 1 tsp vanilla extract
  • 1/2 tsp rum extract.
  • 1 tbsp honey (or 1 tsp splenda)
  • 1 cup unsweetened almond milk (regular or vanilla)

Instructions

  1. Soak Chia seeds (if using) for 10-15 minutes, drain
  2. Puree all ingredients in a blender until smooth
  3. Pour into chilled glasses and serve immediately

Notes

When there is lots of good fresh mint and spinach in the spring and summer (or at the farmers market) I get lots of it and freeze it. Just wash, freeze, and crumble, then measure into your smoothie. It works wonderfully. You can also experiment with other fruits in this smoothie, berries are good, as are peaches.
