Purple Power Smoothie

This smoothie is packed with nutritious and delicious super foods that help me feel energized every day! It is nice and thick and has a very pleasant taste and my children LOVE it too! In the summer when I have fresh basil growing in my herb pots on the porch I throw a sprig or two into the smoothie also if I want something a bit different.
Ingredients
- 1/4 C greek yogurt
- 1/4 C regular rolled oats
- 1 C coconut milk
- 1 C frozen blueberries
- 1/2 frozen banana
- 2 TBSP chia seeds
- 1 TBSP local honey
- 1 TBSP coconut oil
- 1 TBSP ground golden flaxseed
- 1 small stem of aloe vera, cut open, scraped of clear insides (1/4 C)
- 2 TBSP Bee Pollen *for topping or mixing in
Instructions
- Combine all ingredients except bee pollen into blender pitcher, process for 1 minute. Stir in bee pollen or pour smoothie into cup then top with bee pollen. Serve immediately.

Benefits for me personally:
Greek Yogurt: Protein, calcium
Oats: soluble and insoluble fiber, vitamins and minerals
Coconut Milk or water depending on the day: hotly contested but for me/blood sugar stabilization
Blueberries: Antioxidant value, inflammation reduction,
Chia Seeds: boosting energy, stabilizing blood sugar, digestive health, lowering cholesterol and (I swear it makes my hair grow faster!)
Honey: allergy relief, antifungal, antiseptic and antioxidant properties, we use local honey (maybe urban myth our grandmothers give it to the children too to lessen allergies).
Coconut Oil: *see coconut milk
Ground Golden Flaxseed: Omega 3โs
Banana: potassium and great flavor and it almost acts like an emulsifier and makes a smooth-smoothie!
Aloe Vera: I suffer from ulcers, this greatly helps my digestive health. (Sometimes I mix the aloe with a little water and take it straight, then add more to my smoothie.
Bee Pollen: B Vitamins, allergies, fertility, athletic recovery. Bee-Candy!
