Seafood, Avocado and Cream Cheese Roll-Ups
This is the perfect refreshing creamy and light snack with a litlle spice to keep you going between meals. Enjoy!
Ingredients
- 8 ounces light cream cheese, soften
- 1 hass avocado, smashed
- zest & juice of 1 lime
- 1 tablespoon cilantro, chopped
- 1 tablespoon scallions, chopped
- 1 garlic clove, grated
- 4 ounces shrimp, cooked & chopped
- 1/2 teaspoon seafood seasoning
- 1/4 teaspoon red pepper flakes
- 4 ounces lobster tail, cooked & sliced (8)
- 8 slices white bread crustless
Instructions
- In a medium mixing bowl, combine all ingredients except lobster and bread; mix well.
- Roll each bread slice flat with a rolling pen.
- Spread a thin layer of cream cheese/avocado mixture on each slice of bread.
- Starting at one end, place a slice of lobster tail then gently roll bread slices into a tube.
- Wrap with plastic wrap and chill until ready to serve. When ready to serve, remove from fridge, cut into 1 inch slices.
Notes
If you are allergic to shellfish, substitute with your favorite protein.
