I have a large family and our holidays revolve around food. We get together the beginning of November and plan our menu and determine our food assignments. We all have our specialty dishes and we know they will be a required part of the meal. We also try to incorporate a new recipe or two whenever we can. Last year I decided to try adding a little spice to our traditional sweet potato casserole. I spiced up the sweet potatoes with cinnamon ginger, cloves and nutmeg, added bacon and cayenne to the pecan topping and then topped it all with a bourbon cream cheese sauce. It was a hit and it now has become one of my requested holiday recipes. Hope you enjoy it!

Ingredients

  • Sweet Potatoes
  • ½ cup+2 tablespoons butter, room temperature
  • 4- 5 sweet potatoes (4 cups mashed)
  • 2 eggs
  • 3/4 cup sugar
  • 1 tablespoon vanilla
  • ½ teaspoon ground cloves
  • ½ teaspoon ground ginger
  • ½ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
  • ½ cup milk
  • Topping
  • 6-8 slices bacon, (½ cup)
  • ¼ cup maple syrup
  • 1/3 cup brown sugar
  • ¾ cup chopped pecans
  • ¾ cup brown sugar
  • 1/3 cup flour
  • ¼ cup butter, cut into pea size pieces
  • ½-1 teaspoon cayenne
  • Glaze
  • 3 oz cream cheese, room temperature
  • ¼ cup marshmallow cream
  • ¼ cup powdered sugar
  • 2 tablespoons bourbon
  • 2-3 tablespoons milk

Instructions

  1. Grease a 2½ quart casserole dish with 2 tablespoons butter. Preheat oven to 350 degrees
  2. Casserole: Bake potatoes until tender. Peel potatoes and place them in a large bowl with eggs, sugar, vanilla, cloves, ginger, cinnamon, nutmeg, salt and milk. Mix until well combined. Turn mixture into prepared casserole dish.
  3. Topping: Spray cooling rack with cooking spray. Place cooling rack on top of parchment lined baking sheet. Place maple syrup in a shallow bowl. Put brown sugar in another shallow bowl. Dredge bacon in syrup and then press each slice into brown sugar making sure both sides are covered. Place bacon on prepared cooling rack. Sprinkle any remaining sugar on top of bacon slices. Bake at 350 degrees for 20 to 30 minutes or until bacon is crispy. Cool slightly and crumble. In a bowl combine pecans, ¾ cup brown sugar, flour, butter and cayenne. Use fingers to combine ingredients. Add bacon. Sprinkle mixture on top of casserole. Bake casserole 35 to 40 minutes. Cover casserole if top becomes too brown.
  4. Glaze: Combine cream cheese, marshmallow cream, powdered sugar and bourbon. Add enough milk until mixture is desired consistency. Serve glaze over cooked casserole.

Notes

Casserole can be prepared the day before and refrigerated until ready to bake.
