Delicious buttery oysters in puff pastry!

Ingredients

  • 24 shucked oysters
  • 2 sheets frozen puff pastry thawed
  • 1 bunch scallions, thinly sliced
  • 4 ounces minced pimento
  • 1 teaspoon hot sauce
  • 4 Tablespoons butter, melted
  • 4 teaspoons sweet paprika
  • cherry tomatoes for garnish

Instructions

  1. Preheat oven to 450 degrees F. Line 2 rimmed baking sheets with foil.
  2. In medium bowl, combine Maryland oysters, scallions and hot sauce. Cut each sheet of puff pastry into 12 squares . Place one oyster with scallion and pimiento on each square. Fold over to create a triangle, seal edges with a fork. Brush with butter and dust with paprika. Bake for 15 minutes until golden and puffed. Place on serving platter and garnish with cherry tomatoes.

Notes

If oysters are not available, small little neck clams can be substituted.
