Sweet and Sassy Poached Salmon

You will love this Sweet and Sassy Poached Salmon for an elegant brunch or evening meal!
Ingredients
- 4 Salmon Fillets, skinless (about 4 ozs each)
- ยผ tsp salt
- 1/8 tsp pepper
- ยผ tsp dill weed
- ยผ tsp garlic powder
- 4 tbsp Bonne Maman Apricot Preserves
- 4 tbsp Crushed Pineapple, drained
- 2 tbsp Capers, drained
- 1 tsp Dijon Mustard
- ยฝ cup white wine
- ยฝ cup water
Instructions
- Sprinkle salmon fillets with salt, pepper, dill weed and garlic powder. For the sauce: In a small microwavable bowl combine Apricot Preserves, crushed pineapple, capers and dijon mustard. Set aside. In a large non-stick skillet add wine and water and bring to a simmer. Add salmon fillets, cover and simmer 5-7 minutes.
- While Salmon simmers, microwave the sauce 30 seconds on high, stir and microwave another 30-45 seconds on high until heated. Carefully remove Salmon fillets to serving plates and top each with ยผ of the sauce.
