Sweet Potato Pie Super Smoothie

I make a smoothie almost every day and love experimenting with flavor combinations. This one is a favorite for those days when I need just a little more lusciousness to start the day! Like all smoothies, it’s easy to adjust the amounts of ingredients to taste and I roast 3 or 4 sweet potatoes on the weekend, so they are ready to go for during the week. Just roast at 400 for 40 minutes, and then refrigerate when cool. They are easy to peel then and ready to go!
Ingredients
- For the smoothie
- 1/2 half of a roast sweet potato, peeled
- 1/3 cup Greek yogurt
- 1 cup orange juice
- 1/4 cup (or small handful) chopped prunes
- 3 or 4 walnut halves
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground allspice
- 1/8 teaspoon ground or freshly grated nutmeg (freshly grated is best!)
- 1 teaspoon honey or maple syrup
- Garnish
- If desired, sprinkle smoothie with cinnamon and drizzle with a little extra honey
Instructions
- Place all ingredients in blender and puree until smooth. Pour into glass and enjoy!
Notes
*Did not include roasting time for sweet potatoes! I always do them a few days ahead!
