Two Bite Cannoli Snacks

Each cannoli snack has two scrumptious bites of crispy cinnamon and sugar pita chips with a creamy cheese accented with bursts of zesty orange, chocolate chips, lightly salted pistachios and fresh raspberries. A sprinkle of fresh mint adds another savory note. I enjoy this snack in the afternoon with a hot cup of espresso or tea. They can also be served with a crispy white wine as an appetizer. This snack is crunchy, sweet, creamy, salty and savory all in two fresh delicious bites .No guilty pleasure here…just pleasure!! And there’s a bonus… no cooking involved!
Ingredients
- 1/4 cup Ricotta Cheese, whole milk
- 1/8 teaspoon Fresh Orange Zest, finely grated
- 1/4 teaspoon Orange Blossom Honey
- 1 tablespoon Mini Semi-sweet Chocolate Chips, divided
- 4 Stacy's Baked Pita Chips, cinnamon sugar flavored
- 6 Pistachios, salted, shells removed, finely chopped
- 4 Fresh Raspberries, halved
- 1 teaspoon Fresh Mint, finely chopped ( Optional)
Instructions
- In a small bowl stir together the ricotta, orange zest and honey. Fold in half of the chocolate chips.
- Spoon 1/4 of the cheese mixture onto each pita chip. Next sprinkle the pistachios and remaining chocolate chips over the cheese. Lastly place two raspberry halves onto each and sprinkle the fresh mint if using. Place snacks on a pretty small plate and serve immediately. Enjoy!
Notes
I used a mini food processor to chop the nuts. Also I used whole milk ricotta to keep the creaminess and flavor in the recipe. Fresh ricotta is even better if available at your local market and is perfect for company.
