Vegetable Salad with Homemade Light Ranch Dressing

This fresh vegetable salad is perfect for spring and summer entertaining. The homemade light ranch dressing is sure to wow your guests!

Ingredients

  • Light Buttermilk Ranch Dressing:
  • 1/2 cup low-fat buttermilk
  • 1/2 cup non-fat Greek yogurt
  • 1 Tablespoon finely chopped fresh parsley
  • 2 cloves garlic, pressed
  • 3/4 teaspoon onion powder
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon celery seed
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon white wine vinegar
  • Vegetable Salad:
  • 3 cups broccoli florets
  • 1/2 cup red onion, thinly sliced
  • 1 cup pea pods, cut diagonally in half
  • 1-1/2 cup julienned carrot
  • 1 cup yellow pepper, diced
  • 1/2 cup radishes, thinly sliced
  • 2/3 cup sunflower seeds

Instructions

  1. In a medium bowl, whisk together buttermilk and Greek yogurt until smooth. Stir in parsley, garlic, onion powder, basil, celery seed, salt, pepper and vinegar. Refrigerate the dressing for at least an hour to blend the flavors.
  2. In a large bowl, combine broccoli, red onion, pea pods, carrot, pepper and radishes. Pour prepared dressing over the vegetables and toss to combine. When ready to serve, fold in sunflower seeds.
