Veggie Zucchini Rolls

This crisp refreshing snack is packed with flavor. The colors are fresh and vibrant and add eye appeal to any party table. After the vegetables are prepared and laid out the rolls are easily assembled and ready to serve. They can be done ahead stored, covered, in the fridge.

Ingredients

  • Veggie Rolls
  • 1/4 cup Neufchatel (1/3 less fat) Cream cheese
  • 1 tsp. Light mild miso
  • 1/4 cup hummus
  • 3-4 Small zucchini (about 2” diameter size)
  • 1 avocado, peeled, cut into strips
  • 3-4 mini yellow sweet peppers, cut into strips
  • 2 carrots, sliced into matchsticks
  • 4 medium radishes, sliced thin
  • 1 small bunch cilantro
  • Toppings and Sauce
  • Roasted black sesame seeds and white sesame seeds
  • Teriyaki sauce for dipping

Instructions

  1. Combine Neufchatel cream cheese and miso. Chop the ends off of your zucchini and use a vegetable peeler or mandolin or slicer to peel your zucchini into long, thin strips. Lay zucchini strip flat and add a small spoonful of cream cheese/miso mixture onto one of the ends of zucchini. Add a few matchsticks of veggies, and a couple of pieces of cilantro. Roll up. Sprinkle with black sesame seeds.
  2. Repeat process using hummus instead of cream cheese/miso mixture. Sprinkle the hummus snacks with white sesame seeds. Dip in your favorite Teriyaki sauce.
