I love the chewy wheat berries combined with the crunchy vegetables, sweet apples and cranberries and creamy goat cheese. It is a great make ahead salad and tastes even better the next day.

Ingredients

  • 1 cup hard wheat berries
  • 1 large stalk celery, diced
  • 1 large carrot, peeled and diced
  • 1 large shallot, peeled and diced
  • 1 large apple, peeled and diced
  • 1/2 cup dried cranberries
  • 1/2 cup olive oil
  • 1/4 cup white balsamic vinegar
  • 1 tablespoon sugar
  • 1 tablespoon dried dill weed
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 ounces goat cheese, crumbled

Instructions

  1. Place wheat berries in a large pot and cover with water. Bring to a boil, reduce to simmer and cook uncovered for 45-50 minutes until soft.
  2. While wheat berries cook, in a large bowl combine all of the remaining ingredients, EXCEPT goat cheese. Mix until well combined. Then softly fold in goat cheese (so it doesn’t break up too much).

Notes

You can substitute feta cheese for the goat cheese if you prefer.
