I love the chewy wheat berries combined with the crunchy vegetables, sweet apples and cranberries and creamy goat cheese. It is a great make ahead salad and tastes even better the next day.

Ingredients

  • 1 cup hard wheat berries
  • 1 large stalk celery, diced
  • 1 large carrot, peeled and diced
  • 1 large shallot, peeled and diced
  • 1 large apple, peeled and diced
  • 1/2 cup dried cranberries
  • 1/2 cup olive oil
  • 1/4 cup white balsamic vinegar
  • 1 tablespoon sugar
  • 1 tablespoon dried dill weed
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 ounces goat cheese, crumbled

Instructions

  1. Place wheat berries in a large pot and cover with water. Bring to a boil, reduce to simmer and cook uncovered for 45-50 minutes until soft.
  2. While wheat berries cook, in a large bowl combine all of the remaining ingredients, EXCEPT goat cheese. Mix until well combined. Then softly fold in goat cheese (so it doesnโ€™t break up too much).

Notes

You can substitute feta cheese for the goat cheese if you prefer.
